Bone Broth

Bone broth is renowned for its numerous health benefits, making it a popular addition to many diets. It is rich in collagen, which supports healthy skin, joints, and bones, and contains amino acids that aid digestion and boost the immune system. Regular consumption may also help reduce inflammation and promote gut health.

Step 1:  Choose bones such as chicken carcass or marrow bones to produce more collagen.  Cook the chicken first and save the bones and carcass. If using marrow bones cook them first prior to using. I recommend using pasture raised chicken or beef.

Step 2: Fill a stock pot or instant pot with 10-12 cups of water.  Add the bones to the pot.

Step 3: Add the following ingredients to the pot:

2-3 carrots unpeeled cut into large chunks

2-3 stalks of celery (with or without leaves) cut into chunks

1 onion, clean and peeled, quartered

5 cloves of garlic, unpeeled

2 tablespoons of Apple cider vinegar

1-2 teaspoons of sea salt

2 bay leaves

½ teaspoon peppercorns

 

Step 4: If using an Instant Pot use the soup or slow cook setting if cooking longer than 5 hours. Cook for as long as possible up to 24 hours at a low setting.

Step 5: Once complete allow to cool.  Strain the broth with a fine mesh strainer into large glass jars. Refrigerate overnight.  The next day you can scoop off any fat accumulated on the top of the broth. It is ready to use, or you can store a portion in the freezer up to 6 months.

Broth can be consumed alone or as a base for soup and other recipes.
